Paleo Super Bowl Chili (Almost)
 
 
Ingredients
  • 1 pack Jenny-O Hot Turkey Italian Sausage or 1 lb Grass-Fed Ground Beef
  • 2 tablespoons Coconut Oil
  • 1 onion, chopped finely
  • 2 cloves garlic, grated with a zester
  • 3-5 Tbsp. chili powder (depending on your preference)
  • 2 tsp. ground coriander
  • 2 Tbsp. ground cumin
  • 2 Tbsp cocoa powder
  • 2 cups beef or veggie stock (fresh or store-bought)
  • 1 can (28 ounces) chopped tomatoes
  • 1 Tbsp. arrowroot powder (for thickening)
  • 1 tsp sea salt
Optional:
  • 1 cup of diced zucchini ( squash)
  • 1 cup of diced red pepper
Non Paleo Option
  • 1 can (15 ounces) organic kidney beans, rinsed and drained
  • 1 can (15 ounces) organic white beans, rinsed and drained
Garnish:
  • Chopped Scallions
  • Chopped Black Olives
  • Cilantro
  • Avocado
  • Hot red chili flakes
  • JalapeƱos
  • *Crushed tortilla chips (not Paleo)
  • *Shredded Cheese (not Paleo)
  • *Sour Cream or Greek Yogurt (not Paleo)
Instructions
  1. Heat coconut oil in a large Dutch oven over med-high heat. Remove casings from turkey sausage. Add sausage, onion and grated garlic to pan, cook until sausage is brown, stirring to crumble. Add chili powder, coriander, cumin, cocoa powder and mix well. Cook for 1 minute. Add stock, tomatoes, beans and salt. Cover and simmer on low heat for 1 hour, checking and stirring every 15 minutes.
  2. Mix arrowroot with a little stock, add to dutch oven and simmer 10 minutes. Season with sea salt and crushed pepper.
  3. Serve in heated bowls and garnish.
